Every menu is designed specifically for the event and style of catering required to maintain quality.
We hand pick our produce and use traditional Mexican recipes with authentic Mexican ingredients.

All salsas and sauces are handmade and no preservatives are used.

There are plenty of vegan and vegetarian options and most dishes can be altered to accommodate dietary requirements.


Huevos Rancheros/Divorciados (vegetarian)
Warm corn tortilla layered with refried black turtle beans & free-range egg, topped with homemade salsa verde or roja, crumbled queso fresco, drizzle of cream and finished with a pico de gallo garnish

Molletes (vegetarian, can be vegan)
Sliced homemade bread rolls topped with refried black turtle beans, melted cheese & pico de gallo

Chilaquiles Rojos o Verdes (can be vegetarian)
Layers of homemade corn chips topped with salsa roja or salsa verde, cream, melted queso fresco & sliced onions, prepared with or without chicken

Corn or Flour Quesadillas with melted cheese & a thin slice of ham


Totopos con Salsas (vegan)
Fresh corn chips with a variety of traditional salsas ranging from mild to hot to choose from: Salsa Chipotle, Salsa Ranchera with Habanero, Pico de Gallo & Guacamole

Small sopes with shredded aromatic chicken on a bed of refried black turtle beans, drizzled with salsa verde, topped with queso fresco & Mexican cream

Albondigas en Salsa Verde (can be vegan)
Mexican meatballs made with lean minced beef, chipotle chiles & tomatillo, simmered in a salsa verde marinade

Cochinita Pibil
Pork marinated in an earthy fusion of achiote, spice & chiles, then slowly cooked in banana leaves

Carne Deshebrada en Salsa Guajillo
Braised beef skirt, shredded & topped with warm spiced salsa made with guajillo chiles

Mole Poblano
Most ancient sauce made with a medley of chilies, nuts, spices & cocoa served with chicken or turkey

Enchiladas Suizas
Corn tortillas filled with poached aromatic chicken, covered in a creamy salsa verde & topped with sharp Swizz cheese

Enfrijoladas (vegetarian)
Corn tortillas covered in black turtle beans & topped with crumbled queso fresco & pico de gallo


Calabazas a la Mexicana (vegetarian, can be vegan)
Softly sautéed zucchini with tomato & onion & topped with Mexican cream & queso fresco

Ensalada de Nopal (vegan)
Salad consisting of pickled cactus from the prickly pear, diced tomatoes, onion & cilantro & dressed in fresh lime juice

Charred chile poblanos sauteed with onion, garlic & oregano

Arroz Fandango (vegetarian)
Also called “fiesta rice”, two layers of long grain rice, Mexican cream, melted Chihuahua cheese, rajas (charred chiles poblanos & onions) & salsa verde

Fragrant red rice cooked with tomatoes, carrot, peas, corn & jalapeños

All of Fuego de la Tierra’s tacos are made with corn tortillas and served with fresh lime, diced onion & freshly chopped coriander, accompanied with a selection of authentic homemade Mexican salsas ranging from mild to hot.

Shredded pork which is braised until tender and sauteed for a crispy outside

Diced beef marinated in pickled jalepeños & lightly seared

Tacos al Pastor
Pork marinated overnight with a smooth achiote paste made with annatto, chile chipotle, guajillo & a blend of various earth-toned spices

Mushrooms sauteed with garlic, onion, tomato & chiles serranos, wrapped in corn tortillas & lightly fried

Tamales are found just about anywhere and eaten any time of day in Mexico. They have been around for centuries and are considered an essential part of Mexican cuisine. There are literally hundreds of different styles and variations of tamales. Below are a select few which can be enjoyed for breakfast, lunch or dinner. They are made with maize flour, therefore a perfect gluten free option, and steamed in corn husk or banana leaves. These are perfect for office baskets accompanied by sides.

Light & crispy, topped with cinnamon & sugar and served with a coffee & chocolate whipped cream
